Llanelli girl's great recipe idea

A Llanelli school girl has come up with the perfect recipe for a healthy school meal.
Year six Ysgol Dewi Sant pupil Elen Jenkins has won a county-wide competition to design a nutritious two-course lunch to feature on the primary schools’ summer menu.
The competition was organised by the Carmarthenshire Catering Service, which serves up more than 19,000 lunches every day in the county’s schools.
The service is currently designing a number of new dishes that will feature as part of the next menu, due for launch in May – and decided to get a little help from their friends…
All schools were encouraged to take part in the competition in a bid to help pupils recognise healthy food groups, and to understand how they form part of a balanced diet.
Elen’s winning entry – pepper pasta in cheese sauce served with chicken and tomato, followed by a fruit salad – was deemed a perfect nutritious lunch.
It scored highly on the catering service’s Saffron system, which is used to measure the nutritional content of all school meals, down to the milligram.
The tasty meal will now form part of the summer’s three-week rolling menu, which features many homemade favourites.
Elen was presented with her prize - £100 worth of craft materials for her school – at a special assembly this week.
She said: “I enjoy cooking and am very excited that my winning recipe will be used on the school meal summer menu. I’m delighted with the extra prize of a cookery book, sketch book and pencils, which I’ll use to create even more colourful recipes.”
Two other county school children were highly commended in the competition, and will receive certificates.
Year six Brynsaron School pupil Emily Lewis came up with a homemade fish pie with potato mice, followed by a gingerbread man biscuit.
Angharad Larkin, of year three at Five Roads School, designed a Mexican chicken and pepper Fajita wrap in the shape of a face, served with salsa and guacamole, followed by a tropical fruit salsa dessert.
Sandra Weigel, Catering Service manager, said the competition was organised to help children think about the food they eat.
“Obesity issues regularly feature in the media, and we are constantly looking for new ways of informing parents and pupils about healthy eating and lifestyles,” she said.
“This competition gave pupils an opportunity to think about healthy foods, and the kind of meals they need in order to have a balanced and nutritious diet.”
The competition was sponsored by school catering suppliers – Franks Ice Cream, Crown Foods, Rachel’s Organic Yoghurts, Calypso Soft Drinks, and Welsh Bros Foods Ltd.
